The Difference
Artisanal Italian gelato is crafted using traditional methods developed in Italy and differs significantly from industrially produced ice cream. While both are frozen desserts, their ingredients, production processes, and final experiences are fundamentally different.
Commercial ice cream typically contains a high level of added air, which reduces flavour intensity and alters structure. Artisanal Italian gelato contains far less air, resulting in a denser texture and richer taste.
Due to higher fat and air content, ice cream generally contains significantly more calories. On average, ice cream may have up to three times the calorie content of Italian gelato.
Artisanal gelato is produced in small, carefully controlled batches to ensure freshness and consistency. Ice cream is commonly manufactured in large centralised facilities using continuous production lines.
Traditional Italian gelato focuses on naturally sourced ingredients, without unnecessary preservatives, artificial dyes, or colourants often found in commercial ice cream.
Italian gelato is naturally softer, smoother, and silkier than industrial ice cream, allowing flavours to be more clearly expressed on the palate.
Ice cream generally has a higher fat content. Authentic Italian gelato is traditionally made with approximately less fat, while fruit-based gelato (sorbets) contain zero fat.
